KIDDERS WITH JERSEY MILK - 1 lb.
Kidders Jersey (4 to 5 lb. wheels or 1 lb. wedges) adds the spicy, floral warmth of whole peppercorns to our trademark Toma. The addition of whole peppercorns is more common in Sicily and Southern Italy. Here, we can make our own traditions! The creaminess of the curd is nicely complemented by the texture of the peppercorn. We make Kidders with both whole milk Holstein milk and with Jersey milk for a richer base. While all our Tomas can be used in recipes this cheese really shines as part of a cheese plate.

Kidders Landing was the port on the western side of Cayuga Lake for the Busy Bee Ferry operated by Captain James Quick between the 1800-1900s. Originally powered by wind and horse, the ferry was a coal powered steam engine in its later years. The peppercorns of our Kidders cheese remind us of the black coal. The old steamboat is sunk just off Kidder’s Point in front of the Busy Bee Store and can be seen when the lake is clear.
Kidders with Jersey Milk is a semi-aged cheese that has a creamy texture and buttery taste as a result of using the richer milk produced by Jersey cows. Having spent less time in the cave, the rind can be eaten if desired, it lends a mushroom-like flavor to the cheese. Sold by the pound, Kidder wedges and wheels are vacuum wrapped for transit. We recommend wrapping in cheese paper at receipt for continued maximum quality. Whole wheels can be purchased.
