It is a long-standing Christmas and festive-table staple, especially in western Norway, where the leg is salted, then air-dried for months until the meat is firm, fragrant, and deeply savory.
Spekekjøtt is the Norwegian name for this style of salted, air-dried meat. Fenalår is the lamb (or mutton) leg. Thin slices show a deep red to reddish-brown color, a mild salty finish, and a clean lamb character without smoke or heavy spice. It is eaten as cured meat, never cooked.
Serve it paper-thin with flatbrød, sour cream (rømme) and lingonberry, scrambled eggs, or pickled vegetables. It also belongs on a Scandinavian grazing board beside sharp cheese and mustard. The sliced pack is ready to plate. The whole leg is for carving at the table the traditional way.
