Nightshade Cheese, 5 oz | Tulip Tree Creamery

Inspired by cheesemaker Fons Smits’ favorite, Old Amsterdam, Nightshade is a long-aged, washed-curd cow’s milk cheese with the buttery depth of a fine Gouda and a gentle cheddar-like snap. Rich and full-flavored, it balances a hint of sharpness with deep caramel undertones and a smooth, firm paste that only gets more complex with time.

Each wheel is aged at least 7 months—often more than a year—until the finish lingers. Serve it on its own, with crusty bread and chocolate, or pour a bold white (Sauvignon Blanc) or almost any red. It belongs on a serious cheese board and melts beautifully when you want something more.

Pasteurized cow’s milk. Vegetarian-friendly rennet. Semi-hard. 5 oz cut.
