Inspired by classic Alpine Gruyère, Milkweed is a sweet-and-nutty cow’s milk cheese with a firm yet creamy paste that slices cleanly and melts like a dream. Aged 3 to 6 months, it develops a rich, rounded depth—savory enough for fondue and gratins, elegant enough for sandwiches and a well-built board.
