Foxys Rockin "Just Like Mom's" Vegan Tuna "Toona" Noodle Casserole

1 can of Sophie's Vegan Tuna, well drained
1 Can of your favorite organic mushroom soup
1 can of Milk product of your choice to rinse out the soup can.
1 large can of organic mushrooms or 2 cups of fresh sliced mushrooms
1/2 cup of red onion, diced to size of your liking
1 8 oz size of mixed vegetables, steamed
1/4 cup Fresh Minced Garlic
Fresh Ground Pepper of your preference to taste
Fresh Ground Salt of your preference to taste
1 Tblsp. of Herb de Provential ( available at World Market ) 
 
Preparation:
 
In a medium size saucepot, put 6 quarts of water , 1/4 cup olive oil and several pinches 
of salt on to boil. 
While awaiting your water to boil, gather together the rest of your needed ingredients.
In a large bowl, begin to assemble the WET ingredients first.Once those are combined, mix dry ingredients together in a smaller bowl.
Cook pasta to package directions. Drain, but do not rinse.Put diced ingredients called for in with warm pasta,
Whisk dry ingredients into the wet ingredients, then add pasta and diced ingredients to the wet ones.
Pour all into a lightly greased 9x12 baking dish. This is a PERFECT make ahead, bake later meal. When ready to make, bake at  375 degrees until the casserole bubbles and is heated through. Garnish top for serving as you may; I often use a 50/50 combo of shredded Swiss and Parmesan cheese. Put the cheese on top when casserole comes out of the oven and cover with foil for about 5-8 minutes. Cheese will melt and may entice
any young ones in the household to eat a bit healthy and they will never know they did....Again..Crave, Taste.
