WindsorDale Vermont Smoked Cheese
Using an 1800 recipe of an Old English farmhouse cheese from the green rolling hills of Wensleydale in Yorkshire, our WindsorDale is a raw-milk cheese similar to the one made famous by Wallace & Gromit. We've imported a European peg mill that tears the curds versus cutting, and we press the curds into tall, cylindrical traditional truckle moulds which set this cheese board star apart in both texture and flavor. This firm, flaky cheese leads with a hint of tart apple and delivers a honeyed aftertaste that pairs perfectly with all things apple.
