Ingredients:

  • 8 ozs kale, destemmed and chopped
  • 1 cup carrot, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • 1 spring onion, finely chopped
  • 1/4 cup peanuts for garnish
  • For Creamy Peanut Sauce
    • 1/4 cup creamy peanut butter
    • 1/4 cup water
    • 3 tablespoons lemon juice
    • 2 tablespoons coconut palm sugar or sweetener of choice
    • 1 tablespoon coconut aminos or Bragg’s liquid aminos
    • 1 tablespoon olive oil
    • 4 cloves garlic
    • 1/2 inch fresh ginger
    • 1 teaspoon sesame oil
    • 1/2 teaspoon sea salt

Directions:
Arrange salad in a bowl, toss with peanut sauce and garnish with peanuts and serve.
