Plant Based Crab Cake Party Roll - Vegan
One Cup of all the following:
Finely chopped onion
Finely chopped celery
Fine chopped fire roasted red peppers
Fresh Ground Black Pepper to taste
Pink Himalayan Salt to taste
3 Tbsp.Chopped Garlic
Italian Blend Spice Mix
One Can of Low Fat Low Sodium Alfredo Sauce
(Or substitute One can of Low Sodium Low Fat Cream of Mushroom Soup if you like)
One Package of Premade Pie Crust of Choice or Crescent Dough
One and one half cup of each Fat Free Sour Cream and Fat Free PlaIn Yogurt
Preheat your Oven to 375 degrees.
Remove your prepared pie crusts from the refrigerator to warm up.
Place your Sophie's Crab Cakes in microwave and defrost: set aside to cool. ( If you plan to make this,
Thaw out in fridge ahead of time)
In a large bowl, mix onion, celery,roasted red peppers,pepper,salt,garlic and Italian Spice Mix.
Open your Crab Cakes and brake them into small pieces into the mixture of spices and vegetables in your
Toss and mix well all ingredients in the bowl.Once mixed well, fold into the mixture the plain yogurt and
the sour cream. Set bowl aside.
Remove the premade pie crusts from their packages and place one one a 9x12 baking sheet covered with
Parchment paper.Unroll the pie crust.
On the unrolled pie crust, cover with the Alfredo sauce as thought making a pizza.Sprinkle with parmesan
Retrieve the bowl of your wet ingredients.Get a second bowl and split the ingredients in half.
Take one of the bowls containing the crab cake mixture and spread evenly over Alfredo sauce and parmesan
Cheese already on pie crust.
When complete, roll pie crust up into a crescent and place on baking sheet.
Repeat with second pie crust.
Place into your Oven and bake until golden brown.
Cut and serve as desired.
