Lobster Rolls with Hot Pink Mayonnaise

Serves 2

This is a summer favorite made even more tempting with the addition of our Hot Pink Mayonnaise. 


2 fresh lobster tails

2 tablespoons Hot Pink Mayonnaise by Victoria Amory (Click to order mayonnaise)

1 tablespoon fresh lemon juice

2 tablespoons chopped chives

Salt and pepper to taste

2 top-split hot dog buns, lightly toasted and buttered

Potato chips for serving


Fill a medium sized saucepan with water and bring to a boil. Place the lobster tails in the boiling water and cook for about 10 minutes, then remove and allow to cool before further handling.

Once cool, remove the lobster tails from the shell by carefully cutting them open. Either chop into generous bite size pieces, or tear apart by hand.

In a bowl, combine the lobster pieces with the Hot Pink Mayonnaise and lemon juice. Mix well.

Spoon lobster mixture into the toasted and buttered buns. Sprinkle chives on top. Serve with potato chips.
