  • *Chicken Brine Ingredient*s:
  • Warm water (just enough to cover chicken
  • 1/4 plus a half of 1/4 cup salt
  • 2/4 cup hot sauce (optional)
  • 2 tbs hot sauce (optional)
  • *Fried Chicken Ingredient*s:
  • 3 chicken breasts split to make 6 thinner chicken breasts
  • 2 1/2 cup of flour
  • 2 eggs
  • 1/2 cup buttermilk
  • 2 tsp of salt
  • 2 tsp pepper
  • 1/4 tsp of garlic powder
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • Sandwich Ingredients:
  • Mayonnaise
  • French's BBQ Mustard Sauce Twangy Sweet and Smooth
  • Ketchup
  • Lettuce
  • Tomatoes
  • 6 Mexican Telera Rolls
  • Caramelized Onions Ingredients:
  • Slice the onion and use only half. Trim the tip and root and remove the skin. Thinly slice the onion from root to stem. (I used purple onions)
  • 2 tbs butter
  • 1/8 cup water
  • Bourbon Sauce Ingredients:
  • 2/3 cup water
  • 1/3 cup sugar
  • 1 tsp brown sugar
  • 2 tsp honey
  • 1 tbs cornstarch
  • 2 tsp Worcestershire sauce
  • 2 tsp plus 1/8 tsp Soy Sauce
  • 1 tsp plus 1/8 tsp ketchup
  • 1 tsp Sweet Baby Ray Mustard Sauce
  • 1/2 tsp plus a pinch of salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp cayenne pepper
  • 1/2 tsp pepper
  • 1/8 tsp cumin
  • 1/8 tsp ground sage
  • 2 tbs white vinegar
  • 2 tsp plus 1/4 lemon juice

  • Add water to a large bowl or pan then add salt, cayenne pepper and hot sauce. Whisk until salt and seasonings dissolve into the water.
  • Add the chicken breast and make sure the chicken is covered completely with the water
  • Cover for 30 minutes.

  • Prepare the flour and mixture adding the flour to a large ziploc bag or paper bag or bowl. Add all
  • the seasonings and mix until seasonings and flour is combined.
  • Add buttermilk and eggs to a bowl (I used a rectangular shaped container the size of a loaf pan)
  • take a chicken breast and coat it with the egg then into the flour then back into the egg/milk mixture.
