Fiesta Stuffed Peppers with Turkey ,Chicken and Quinoa

8 Sweet Peppers:4 red and 4 Yellow
1 Cup Finely Chopped Onion
3 Tbsp.Chopped Garlic
1 Tsp.Fresh Ground Pepper of your preference
1/2 Tsp.of salt
1 Tsp. Italian Seasoning
8 cups cooked Quinoa of your favorite preference
2 cups fresh mushrooms cut to pieces of your preferencial size
2 jars of your favorite marinara sauce[ can continue with the white meat version ,if you choose to do so,
by making your own or purchasing alfredo sauce]
1 Cup of Parmesan Cheese
1 lb.each Ground Turkey and Chicken
Baby Spinich to Garnich when serving
 
Preparation:
 
Gather all ingredients you need for this recipie.
In a large bowl, combine all ingredients,once chopped to your preference to include the following; Onion,Garlic,Salt,
Italian Seasoning, Quinoa,Mushrooms,Parmesan Cheese, Turkey and Chicken. Mix the ingredients all together very well.
This is the stuffing for your peppers.Set the stuffing aside.It is time to prepare the peppers.Turn your oven on and preheat
at 375*.
Assemble your red and yellow peppers.One pepper at a time, cut off the top and stem and clean out the inside membrane
that holds the seeds and discard. Cut the lid of the pepper in to thin pieces and put it in your stuffing mix. Repeat this process 
for the remainiing 7 peppers.
Retrieve your bowl of stuffing and mix in the chopped lids of your peppers.They will add a bit of color to the stuffing. If you
would choose red onions, they would do the same for this recipie.
In a baking dish large enough to accomodate the height and dimentions of the peppers, stuff each pepper , one at a time,
and stand,top side up in the baking dish.Fill the dish 3/4 full with water. Place this baking dish on a second dish underneath to 
any overflow that may occur during baking.
Place in the 375* oven and bake until the peppers are tender. Times may vary per`oven.
When done, plate and serve with sauce of choice that you've chosen to heat while the peppers are baking.
Pair with a healthy salad for a meal that pleases the palate and warms the soul.

Gather all other ingredients at the ready.

In small bowl to the side, mix all dry ingredients .

In a large bowl, mix all ingredients that remain except the sour cream,yogurt, mustard and lemon juice.

In the large bowl, do all of the tuna,vegatables,garlic,onions eggs and celery and toss together. Once all is tossed well, mix dry ingredients slowly.

In a side bowl,start with two cups sour free and two cups yogurt with the full amount of mustard and 3 tsb of lemon juice. 
Mix well with set ingredients in large bowl.
Continue adding sour cream, yogurt and lemon juice to taste and consistency plus the Parmesan cheese to firm up and add taste to the end palate experience.
