Chicken Parmgiana with Italian Tomato & Basil Sauce

WHAT YOU NEED:
bag of fresh breadcrumbs
80g parmesan cheese
2 chicken fillets
1 ball mozzarella
fresh basil
1 tub RIF Tomato & Basil
2 eggs
sea salt and black pepper
what to do:
place your chicken fillet between 2 pieces of cling film and bash with a rolling pin until nice and thin..
beat your eggs and season…
mix your breadcrumbs and half your parmesan together…
dip your fillets in the egg mixture and then the breadcrumbs…
fill your frying pan with a good bit of olive oil and cook on both sides over a low heat until golden…
drain on kitchen paper…
heat your RIF Tomato & Basil sauce in the microwave and pour into an oven proof dish…
place your chicken on top and top with mozzarella, parmesan and basil…
cook under the grill until golden and bubbling…
serve and enjoy…
