Tumminia Semola Paste
This whole semolar is produced by natural stone grinding of the timilia or tumminia durum wheat cultivar, which falls into the category of ancient native Sicilian grains. It is grayish in color, thanks to the presence of bran, and with an intense scent, thanks to the presence of essential oils that are transferred from the germ to the semola. The stone milling, working at low rpm, does not overheat the product during the breakage of the caryosside, and gives a final product of the highest value, rich in important substances such as proteins, vitamins, magnesium, calcium, iron and other mineral salts. An integral semoration with a high protein content and low gluten index can be defined.
