Frequently Asked Questions

Do your products contain allergens?

All of our products are FREE OF: grain, gluten, soy, corn, and peanuts; all are dairy free except for our Farmhouse Cheddar Crackers. Our products are produced in a peanut-free facility.

Our mixes DO contain tree nuts (almond) and coconut.

The Chocolate Chip Cookies/Artisan Bread didn't turn out like they were supposed to. What happened?

We admit it, the instructions for the cookies are a little confusing. There's a picture of 3 eggs but the recipe only calls for one. The correct amount for the cookies is one egg. 

In the instructions for the sandwich bread, the bake time reads 1 hour and 15 minutes. Oops, that's a typo. Optimal baking time for the sandwich bread is 35-45 minutes.

Are the nutrition facts for the mix only, or for the prepared products?

The nutrition facts that are listed on the boxes only include the dry mix. Any added ingredients, such as eggs, oil, and other mix-ins may alter the nutritional information. 

What can I use as an egg replacement?

In place of eggs, we recommend using apple sauce (in muffins, pancakes and cakes only). For each egg, use 1/4 cup applesauce + 1/2 tsp baking powder. You could also try your hand making flax eggs.

**Please note: our mixes turn out best with eggs. Using an egg replacement may slightly change the taste or texture of our mixes.

Can I use a different oil than what is recommended?

You most certainly can. Just want to make sure to consider flavor when choosing your oils. Coconut oil, for example, has a slight coconut flavor, so you may only want to use it in one of our sweeter baking mixes. No one wants a coconut-flavored pizza! ...or do they?

Do you have high-altitude instructions?

Nope, our mixes will cook the same no matter the altitude.

Do you ship outside the US?

Unfortunately, we can only ship inside the US for right now. We’re working on expanding, and we’ll be sure to make an announcement for those of you looking for Simple Mills around the globe.

 

Our team

Simple Mills began out of a necessity and a desire for a food that is simple, healthy, and delicious.

In her very own living room in North Carolina, Katlin made the very first Simple Mills muffin mixes one-by-one, using intentional ingredients that made her feel great.

Now based in Chicago, Simple Mills continues the tradition of baking with love. The brick walls, big windows and mini kitchen of our little office are still where our baking innovations come from. Occasionally, however, we’ll stop to laugh at the weird stuff, get excited about accomplishments big and small, or break out the kombucha and have a dance party.

If it weren’t for Katlin, we would all still be making our favorite healthy baked goods from scratch, and let’s face it, that would make us very sad. Katlin is from Charlotte, North Carolina where she stayed until she graduated from UNC Chapel Hill. She attended Chicago Booth for a short time before starting the company. These days, Katlin doesn’t have a whole lot of free time, but when she does, she’ll either take to the slopes and go skiing or to the woods for a weekend of camping.

Our Pancake & Waffle Mix is Katlin’s favorite so far, and if you’d ask her, she might suggest adding some chopped pecans and bananas on top to make it extra delicious.

 

Peter Eck

Peter is a Chicago boy, but he has lived, worked, and traveled all over the world. He is driven by big ideas and building brands, and has a deep passion for great customer experiences. With a huge variety of interests, and a newborn baby at home, Peter hasn’t been bored since 1997. He finds balance in staying active, and tries (emphasis on “tri”…wait for it…) to compete in triathlons throughout the year (boom!). Peter mastered the use of strategy buzzwords in his consulting days and loves the “synergy” of friends, family, food, and fitness.

Michelle Lorge

Since Michelle attended both Michigan State for undergrad, and the Kellogg School of Management for business, she accordingly describes herself as equal parts cool and nerdy. She is a mom of three boys, so between working and keeping them alive, she doesn't quite remember what the words "outside hobbies" or "me-time" really mean - but she wouldn't change that for a thing! Michelle is passionate about healthy living and has recently begun practicing meditation (or at least trying).

It's a toss-up between our Pizza Dough and our Chocolate Muffin mix. That's because they both taste amazing, but also because her brood thinks they'refinally getting to eat junk food (don't tell the kids!). No arm wrestling at the table, no negotiations, no threats...priceless.

Bobbie grew up in the Northwoods of Wisconsin in Park Falls - the Ruffed Grouse Capital of the World! Although she's been a permanent resident of Chicago for many years, she enjoys going back home to take a breather from the city. She claims that a quiet day of boating and fishing is much more enjoyable now than it was growing up. Bobbie loves all things active: biking, swimming, rollerblading...her newest obsession is paddleboard yoga. You'd never guess it, but Bobbie is also a brand new mom. The newest addition to the family is baby Jordy, but there's also Woowoo, a 12-year-old Yorkie.

Lory grew up and still resides in the Chicago suburbs.  With her passion for vacationing in warm, exotic places, and travelling to the West for her sales role at Simple Mills, you’ll rarely find Lory at home.  When Chicago finally has some decent weather in the summer, Lory prefers to bike, hike, play a little golf and hang out at outdoor patios with her husband, two grown daughters (and their hubbies), and three step daughters.  She also wants Michelle to teach her the art of Meditation, once she figures it out!

Her love for finance actually scares us sometimes, and she's also the best Excel teacher that we've ever met (besides Katlin). Amy loves to run, hike, and lately has been practicing giving good hugs. Based in Atlanta, GA, Jenna lays claim to being a Florida Gator. She earned her degree emphasizing health promotion and wellness at UF. Jenna is our resident self-proclaimed foodie and her life’s passion is real food, fitness and healthy living. You’ll find her spending time growing veggies, researching nutrition, working out and cooking in her kitchen. Oh, and she apparently cheers almost daily about how much she truly loves her job!

Jenna’s fav is the Artisan Bread Mix. We think she likes it so much because it gives her options – bread, rolls, focaccia, flatbread, croutons, bread crumbs, cinnamon rolls… you get the idea. She’s so darn indecisive, and it feels like she doesn’t have to limit her choices with this one. Jenna also says it’s reminiscent of her college days, where she and her bestie would choose where to eat dinner based on the type of bread they were craving.

For a chocoholic like Beth, nothing hits the spot quite like our chocolate muffins (so she says - and we agree). She might suggest adding some mini chocolate chips, if you're into that kind of thing.

Margaret is from Carmel, Indiana, which as she likes to point out, is the unofficial roundabout capital of the US. I don’t know why she likes to point this out. She studied Psychology and French at Indiana University, with a brief stint at the University of Aix-Marseille in Aix-en-Provence, France. In her free time, she enjoys cooking, organizing things, romanticizing things, and dead lifting 225 lbs. Just kidding, that only happened once.

Wendy is an Illinois-Indiana hybrid. She is a Hoosier from birth, and spent a few years running around IL cornfields in her youth. Wendy will forever bleed crimson thanks to her four years spent at Indiana University. However, Chicago now has her heart as you will find her rooting for the Blackhawks, White Sox, Bulls & Fire! Chicago also brings her serious taste bud joy thanks to the stellar culinary scene – this foodie cannot get enough!
