Two years ago, my doctor diagnosed me with ovarian cancer and told me that I would need to have one of my ovaries removed. After visiting the best specialists in New York, each of them confirmed that initial diagnosis. The most devastating part was that I would unlikely be able to have children.

My partner, George, began to research alternative treatments, thinking that surgery might not be the only option. He found a study where women in similar situations were using alternative treatments and a raw food diet to find healing. Neither of us was particularly conscious of our diets and we were certainly skeptical of such a simple solution to a problem as profound as cancer.

We decided to pursue a holistic treatment first and reserve invasive surgery for the final alternative. I enlisted the help of a holistic doctor and began a diet restricted to food that was raw, organic, Non-GMO, gluten-free, and dairy-free. George joined me in support. It was a drastic change for us, since we were used to eating whatever we wanted, but we stuck to it and monitored our health closely.

After a month, my doctor informed me that the cyst appeared to be shrinking. After two months, he confirmed that it had shrunk considerably. By the end of the third month, the cyst had disappeared completely. We were all in disbelief.

Around the same time, we discovered some new cells had begun to grow: those that would become my beautiful baby boy, Lukas. I was pregnant, something that had seamed unfathomable just months before. Now, a year later, I have a happy, healthy, and beautiful child. If I had not pursued a holistic approach, Lukas would have never been born. Furthermore, my fertility is now higher than it has ever been.

And my partner? Him changing his diet to support me resulted in drastic improvements to his own health, including increasing his energy, improving digestion, and strengthening his immune system.

With the miraculous recovery that I made, and the overall improvements to our health, we developed a passion for holistic food, for food that is organic and has not been genetically modified, for raw, gluten-free and dairy-free foods. We decided that we needed to spread this learning to as many people as possible.

One of the foods that was essential in this journey was an ancient superfood known as a TigerNut. It is a root vegetable (not a nut) that originates from Northern Africa and the Mediterranean. TigerNuts are loaded with fiber in the form of Resistant Starch, a prebiotic that actually helps our bodies to develop probiotics. They are rich in iron, potassium, and other essential nutrients. A recent study by Oxford University revealed that TigerNuts made up to 80% of our Paleo ancestors’ diet. With everything we had learned along the journey, we felt compelled to share this little tuber with the world.

We created a company called Organic Gemini that uses TigerNuts as the centerpiece for many different types of products, including a beverage called Horchata, a gluten- free flour, a cold-pressed oil, and of course the raw organic TigerNuts themselves. Although TigerNuts, also known as chufa, are popular in different parts of the world, we are excited to introduce it to the US through these products. We are honored and humbled to be able to help other people experience this wonderful superfood so that they can reap the health benefits that we have experienced and continue to experience.
