Turkey and Brie Sandwich with Peaches & Arugula

Ingredients
- 1 ciabatta roll
- 3-4 turkey slices (I used Applegate)
- 2 whole (round) peach slices
- 4 slices of brie cheese
- ¾ c. arugula
- For the mayo:
- ¼ c. mayo
- 1 Tbsp. sriracha sauce
- ¼ tsp. chili powder
Instructions
- Slice ciabatta roll; top with turkey slices, peach slices, and brie cheese.
- Bake open face in 375 degree oven 10 minutes or until cheese is melted.
- Top with arugula and spicy mayo.

Cathy, I’ve been so obsessed with peaches in savory dishes lately, so this sandwich is really calling my name! What a delicious combination, and I love the sound of that spicy mayo!

I do the same thing as restaurants Cathy. If you know that you love a certain meal, why risk getting a bad one, right? LOL This sandwich looks like a keeper!!

Cathy you made me a lunchtime hero with this recipe! I made this recipe for 13 hungry campers on our family camping trip. Everyone loved it and ate seconds. What a great combination of fresh ingredients. Awesome job Cathy!!!!!
