SCRAMBLED EGG BRUSCHETTA

Ingredients You Need

  • 6 Pieces French Bread, sliced
  • 4 Eggs
  • 2 Tablespoons milk
  • Mozzarella Cheese, sliced
  • Tomatoes, diced
  • Red Onion, Diced
  • Fresh Basil, thinly cut
  • Red Wine Vinegar
  • Olive Oil]
  • Salt
  • Pepper

Instructions

Step 1 – Slice the French bread in half and coat slightly with olive oil

Step 2 – Broil for a couple minutes or until the bread is browned

Step 3 – Scramble your eggs by first whisking together the eggs and milk then scrambling in a pan

Step 4 – Add a slice of fresh Mozzarella on top of the bread

Step 5 – Place a large scoop of scrambled eggs on top of the cheese

Step 6 – In a small bowl mix the tomatoes, onions, basil, red wine vinegar and olive oil

Step 7 –  Add a scoop of the tomato mixture over the eggs.  Season with a small amount of salt and pepper.  Enjoy!
