The star of this gift is the Parmigiano Reggiano DOP from Valserena, the oldest dairy in the Parma district. Made exclusively from Sola Bruna (brown) cows' milk which is rich in butterfat, this cheese has a richer flavor and creamier texture than Parmigiano Reggiano from many other dairies in the area. In fact, there are only four out of more than 400 dairies which produce Parmigiano Reggiano that source their milk from brown cows, which makes the cheese especially rare. The included cheese knife makes it easy to cut off small chunks to nibble on as a snack, or you can grate it over fresh pasta for the perfect finishing touch.
